Thats why it had to be done in 1 take. If you look real close at the video for days of our lives, you can see Brian is still writing the last few lines as Fred is singing it. FACT.

Yes there are a few 'Making ofs....' from The Miracle videos, and snippets have been seen in the official documentaries and TV specials over the years. The first was I WANT IT ALL, then BREAKTHRU and SCANDAL. As well as behind the scenes stuff, there were also interviews though not with Freddie) especially on the BREAKTHRU set.
