Technicaly speaking the Rainbow gig wasnt "re-recorded" in so much as the band going into the studio and overdubbing vocals and what-not SirGH.... but backing vocals and FX from the Album multitracks were added / spun / flown in or overdubbed on to the concert itself. From what ive heard and read, this was not Queens decision to do so .. it was done by "Trident" (?) who own'd the rights to the film and their material at the time.

All those overdubs, editings and mixing etc on official releases is one of the reasons I like audience recordings so much ;-)

Being unable, for lack of knowledge, to answer your question directly, I think I could, perhaps, address the problem that is bothering you: to what extent your notions and conceptions about music, live performances, sound engineering and editing are, maybe, spoiling the joy you once had or would have by listening to - or watching - an offically released live performance, for example.
I'd just do what Socrates does in Plato's Mênon: remembering you of what you already know. I hope it helps!
Editing, let's put it more broadly, has been with us for a good deal of time. It's very crucial for you, as a Queen fan, to understand that overdubbing and other editing techniques have not only been systematically used for decades, but played a central role in shaping the evolution - or regression, who knows - of music itself and the way we experience it.
Why all that? Because you may get the wrong impression that Queen was not really a good band and, therefore, they needed all this technique to sound like you like them to sound: suddenly, though, it seems all...fantasy, fiction, because many people come to think that there's no music there anymore, just a couple of more or less talented guys with good - that is, easy to sell -ideas assisted by the sound technicians and managers.
It's usual to see people blaming the band: Freddie wasn't capable..., because some people feel this need for perfection in everything.
Fact is: is Queen or Rock and Roll an exception there? Are there no editings in live performances in jazz, classical music cds or dvds...?
Vladimir Horowitz. Arguably XX Century's greatest pianist. Huge talent? No, not at all: genius. A total genius who changed the whole way many pieces had been played before his coming into the scene. They forced him to do a lot of stuff: overdubbing on his live performance at Carnegie Hall being one of the most pleasant things he had to do. He was also forced to get "straight" and, you know, had excellent treatments for depressions. After people thought Horowitz had vanished forever and ever, there comes the guy, an elderly gentleman to record some of the most amazing material you'll ever likely to hear in the piano repertoire.
Now, think about it: I came across many studies on Liszt. I went through his letters, his essays, all that stuff. Well, the guy is still considered the greatest pianist...ever! He changed the way the instrument was played, that's true. He was also an amazing composer. It's not hard to find him complaining about some of his own performances: "that night was terrible, I missed so many crucial notes", and so on...nowadays, Liszt would have been asked politely to do some overdubbing. ;-)
Marc-André Hamelin, arguably the greatest living pianist. For some, the greatest ever, the guy who's able to play Godowsky as if he were playing the C major scale. Ok. I love the guy, I study his playing. I like him so much that, well, I attended many of his recitals. Though called an "Iron Man" by fans and the industry, thus giving the impression the guy could never make any mistake, he does a good share of them.
There are recitals which are not good at all: he has some trouble playing Schumann, though he has improved over the time in this regard, he makes all sorts of mistakes. On the whole, however, he's absolutely fantastic: he's an amazing pianist who most of the time is able to deliver brilliant performances.
When it comes to releasing a product, though, yes, they often edit out the mistakes or the errors.
There are people who don't like it. There are people, like me, who see no problem in it: some editing and improving is necessary to do justice to the artist, that is to say, to convey the message that, on the whole, the artist in question was damn good.
