This is really a question to those in the UK

Say if you were quite ill and the Hospital wanted to keep you there, but you knew you'd be fine at home and didn't want to, can they force you?

yeah, if you feel fine, they should let you go, but under your own written consent, i would think, it's your life :)

What about if Parents force you?

if you are underage, i don't think you can escape, you have to have a guardian sign you out, i would suppose
