I'm no guitar hero, but I use CoolEdit Pro for my recording of guitar, re-mixing and also recording from cassette. This programme has the facility of multitracks etc. All else you need is a guitar, a stereo lead and some talent! I have all but the last one! :-)

Pro Tools is probably the best one. There is a very useful free demo version out there. I use a combination of Pro Tools, Cool Edit, and a 4 track Yamaha digital recorder/mixer.
