Does anyone know if the music for the WWRY musical soundtracks is actually recorded by Queen? In other words, are the instrumental recordings the cast karaoke-over Queen instrumentals or Queen songs recorded by another band?

No, they're played by the musicalband.
Hopefully, you're not thinking of buying them cause I think they sound bad. They sound kinda cold and small.

They've got nothing toi do with the real thing- it's much better to go to Dominion Theatre and watch the show... The CD doesn't give any justice to the show...
The Aussie/ New Zealand version has a bonus track with Annie Crummer singing to a reworked "Another One Bites The Dust" backing track from Queen themselves. But even better is the instrumental version available on a 3 track single.

You can find on the spanish version (Madrid show) an extra cd single with a "jazzy - classic" version of "Solo por ti" (No one but you) featuring Brian and Roger.
