Since he liked to use everything when it came to making music, that would be kind of hard to determine. He would probably still have that amazing voice though, no matter what he did.

He'd be doing caberet stuff like Michael Buble. Freddie would be the premier crooner in the entire universe. Just look at 'In My Defense' and his later stuff.
He'd have taught himself to play the lute, and would be using it to deliver solo acoustic renditions of Tubular Bells

Rap with opera has been done before (Warren G + Sissel - Prince Igor) :) quite nice actually
I'm pretty sure he would be making musicals, classical stuff and of course Queen stuff.
