akira kurosawa's the seven samurai is a film much of which is composed of breathtaking fight scenes.
Rob Roy was a *shockingly* bad movie, but the end duel is pretty good.
The 40 minutes of reconstructed "lost" bruce lee fight scenes from game of death are great, but most of it isnt in the movie its self.
from the masterpiece that is saving private ryan, i will single out the scene in which melish as played by adam goldberg fights a german soldier. ofcourse melish is killed with a bayonet. its heartbreaking.
When the ninja guy in Indiana Jones (Raiders of the Lost Ark i think) is showing off his skills with his sword, the crowd expect Indiana to show off too but he simply looks at him in a "I'm NOT in the mood" look, takes out his gun and shoots him.
Priceless! But not much of a fight involved :P

The final fight scene in BLADE! Blade vs. Frost.
Starting with when Blade catches his sunglasses, to his final line to Frost "some mother f***ers are always trying to ice skate uphill" haha

That gun shot was originally not scripted on the movie. Instead Indiana Jones was supossed to fight the guy.

When they were shooting the scene Harrison Ford decided to be a funny guy and shoot guy with the sword. Spielberg and Lucas thought it would be hilarious and kept it like that.

Mr. jingles my understanding of the story is that harrison ford felt sick and wanted to go back to the hotel the production was staying at, so mr.spielberg came up with the scene that is in the film.
Have to agree with Music Man and say Bruce Lee v Chuck Norris in Return of the Dragon. Great fight choreography all through. And to show my age, John Wayne v Victor Mclaglen in The Quiet Man. They start in a field, brawl all the way into town, stopping off for a pint of guinness and then continue on into the countryside. Classic stuff.

and of course the final fight, Lou Kang vs. Shang Tsung. haha, classic.

I have heard a similar story. Mostly everyone in the crew had fallen ill due to food poisoning, with the exception of Spielberg whose diet consisted entirely of Spaghetti-O's. I have no idea from whom the idea was initially cast, though.
Creativity can always cover for a lack of knowledge.
