Anything in the 1976-77 era, really. That's when they were at the top of their game.
But if I had to pick one, it'd be pretty much any night from the autumn 77 US tour. Every show we have on tape is different, as they had more of a rotating setlist than any other tour.
Doing All Right, Ogre Battle, Now I'm Here, Sleeping On The Sidewalk, Spread Your Wings, It's Late, My Melancholy Blues (and maybe even others) were all on rotation - they had over 30 songs in the can. Clearly the relative ease of the NOTW songs gave them a lot of confidence. They slayed every night.
I'm sure they were great pretty much every night of their career, but there was a certain musical focus they had in this period. Every artist has their peak, and this was theirs.

^^^ yes 77, but I also think that The Crazy Tour was also another high point. With a good setlist and some rotation too.

True. But I still lean to 77, because they'd dropped most of the old songs by 79.
