There is a short clip of we will rock you being performed in Chicago the clip is a professional recording so does that mean the whole show was professionally recorded?

It's probably from the stage camera feed to the screens. They are fed through a vision mixer. It wouldn't be hard to take a short mix from these. From the footage of the gig I've seen there doesn't seem to be a full film crew.
I would guess, out of choice that if they were going to film a show it would be later in the tour

I was there and I didn't see a lot of cameras about 3, 4 tops

I don't know, that gig probably won't be released. If there aren't more legs of the tour and they only play the gigs scheduled, and if they release a Bluray of the tour, my bets are three:
Las Vegas, smallest venue of the tour but two nights,
Madison Square Garden, 'cos Brian really like the place
Washington, last date of the tour and the only one open-air.

Cameras are approaching commodity status, and camera operators have to be on their game even if it's only for the show screen. So they could do many things with the footage, and there'd be no need to throw it away...

If they released a Paul Rodgers concert, they'll no doubt release a Lamburp one, going by May and Taylor's enthusiasm for him.

There are only four cameras and as they are part of the gigs video set up they are all filming close ups of the stage/ band members. There is one stationary. Hard focus camera at the FOH desk too.
These cameras wouldn't be enough in number or position to film a good quality and entertaining film/DVD of the whole show.
A dedicated film and recording crew would be needed.
